Confetti Cabbage Salad
Shredded cabbage (approx. ½ head or 15 oz bag of pre-shredded cabbage)
Red Cabbage (1/4 head shredded)
Green Onions (1 bunch -chopped)
3 T Slivered Almonds (toasted
1 Package of chicken flavored Ramen Noodles with a
seasoning packet (any brand)
3 T Sesame Seeds
Dressing
1 cup oil (I prefer canola oil)
6T Rice Vinegar
4T sugar
1 tsp salt
1 tsp pepper
Optional
6 oz shredded pulled/shredded chicken or salmon (I like to use the breast of a rotisserie chicken)
Put shredded cabbage (both colors) along with the chopped green onions and sesame seeds in 1 large bowl.
–reserve about 3 T of the chopped green onions for a pretty garnish at the end) Remove the seasoning
packed from the ramen noodle packet and crush the noodles. Toast the slivered almonds.
For the dressing, mix together the oil, rice vinegar, sugar salt and pepper.
Add the shredded chicken and toss the dressing into the cabbage slaw mixture. Add the dressing slowly depending
on your preference. You may not need it all depending on how much shredded cabbage you ended up with. Try not
to completely saturate the salad. Add the crushed ramen noodles, the toasted almonds and the seasoning packet.
Toss until mixed.
